Healthy Graham Crackers

Honey Graham Crackers (with coconut oil!)

4 - 4 1/2 C white wheat flour
1 tsp salt
1 tsp baking soda
1 tsp cream of tartar
1 C coconut oil (stiff)
1/2 C hot water
1 egg lightly beaten
1 C honey ( or 1  C cane sugar)

     Mix dry ingredients in bowl. Cut in coconut oil. Add egg, water, and honey mixed together. Roll out on floured surface and cut with cookie cutter. Bake at 350 for 10-15 min.

Natural treatment for acne scaring

Having fought acne most of my teenage years, I am now frustrated with the little red scars on my face. They are not horrible, but they are there and I don't want them. However, I am a pretty die hard naturalist so I wasn't about to go pay $100 for a chemical filled cream to rub on my face; instead, I started doing some searching. Luckily I came across this face mask and, after using it for a few months, I am more than pleased with the results. If you suffer from acne scars or any discoloration on your skin this might be for you. And as an added bonus. it is super cheap and easy to make.
                      
                 Mix together: 
                     -2 TBSP natural honey
                     -2 tsp. goat milk (Fresh is best but wal-mart has it in cans too) =) P.S. if you are lactose intolerant, use either fresh lemon juice or coconut milk here. 

Apply the above mixture to your face once a day and let is set. I do thirty minutes but if you have sensitive skin, start out at ten or fifteen minutes and see how much time your skin can handle. Wash off with warm water. Your skin will feel clean, soft, and refreshed as well as tightened. And after consistent use you will see it becoming beautifully clear and smooth. Best wishes and enjoy!

Coconut Oil Chocolates

Coconut Oil Chocolates

1/2 C Cocoa (or Cacao)
1/2 C coconut oil 
2-3 TBSP Pure maple syrup (Agave works as well)

   Melt the Coconut oil then add the sweetener. Stir in the cocoa powder till all the lumps are gone. Poor into molds and freeze or refrigerate. Note: you can add nuts or a little peppermint extract for different varieties.

1/2 C  pure maple syrup
1 1/2 C cane sugar
1/2 C water
4 egg whites
2 TBSP Gelatin powder
4 TBSP cold water
1 tsp Vanilla extract

 Mix gelatin and 4 TBSP cold water. Set aside. Mix syrup, sugar, and 1/2 C water in sauce pan and start heating. While that is heating put the egg whites in your mixer and start them on low speed. Heat the sugars to 235 degrees and remove from heat. Add gelatin mixture to sugar. When egg whites are peaking poor in sugar mixture slowly while mixer is mixing. Add vanilla. Let mixer go on high speed for about 20-25 min or until the marshmallow is cooled and peaking. Put in icing tube. On a cookie sheet covered in wax paper and sugar (so they don't stick) make the base of the peep by making a tear shape. Then start at the thick part and build the chest and head, letting the marshmallow pull away to make the nose. Sprinkle with sugar or leave plain. Let set for 24 hours. (if color is desired mix food coloring into sugar and sprinkle on top, but you loose the "All natural" in this step due to the food coloring. You can find food coloring that is natural but it is usually made from fruit juice so it is perishable.)

Flour Tortillas

3 ½ C white wheat flour
1 tsp salt
½ tsp baking powder
7 TBSP coconut oil
1 C very hot water

Mix dry ingredients. Cut in shortening. Add water. Knead three minutes. Cover with plastic and let set 15 min. roll out on hard surface and grill on flat grill (cast iron works great).

All Natural, Healthy Chicken Pot Pie Filling

Chicken Pot Pie Filling

2-3 lbs boneless, skinless, chicken breast
1 finely chopped stalk celery
1/2 bag frozen peas
1 qt. Almond milk (or half and half)
2-3 Tbsp chicken better than bouillon
1 1/2 C chopped carrots
Thicken with 1/2 C corn starch and cold water mixed.

Boil vegetables in large pan with chicken base and 2 quarts water till tender. Cube chicken and cook in sauce pan till completely cooked through (season with onion powder, garlic powder, and salt). Add almond milk and chicken to vegetables. Let come to a boil again. Add corn starch mixture slowly while mixing filling. Scoop into pie shells and cover with pie crust top (makes about 12 little pies or 2 large). Bake at 400 for about 20 min.

Pie crust

1 C white wheat flour
1/4 tsp. Salt
1/3 C coconut oil, not melted. (or lard)
2 1/2- 4 TBSP ice water.

Put flour and salt in a bowl. Cut in coconut oil or lard. Add water lowest amout first till all ingredients clump together (do not over knead). Roll out on floured surface and put in pie pans. Bake at 400 for about 20 min or as directed for specific pie filling.

Healthy Homemade Chicken and Rice Soup

Chicken and Rice Soup

2-3 chicken leg quarters
4-6 small red potatoes
2 celery stocks
Chicken Better than Bouillon
1 1/2 C brown (or white) rice
3 cloves fresh garlic
1/3 fresh onion.


      Boil chicken in 3 quarts water with 1 TBSP salt, 2-3 hours or till meat is falling off bones. Remove chicken. Add rice and cook till done (brown 50 min. white 20 min.) Add chopped garlic and onion. Cut vegetables and add when rice is done. Add water as needed. Add 2-4 1/2 TBSP better than bouillon (to taste). Pick chicken off bones while the vegetables are cooking (cook them about 25 min.) Add chicken and enjoy!

All Natural Super Healthy Fruit Snacks!

Fruit Snacks 

NOTE: Allow all ingredients, especially the sweetener, fruit juice concentrate, and fruit puree to come to room temperature before you start. 

1 C water
½ C beef gelatin
¼ C maple syrup or honey
1 C fruit juice concentrate
1 C fruit puree (I use frozen strawberries, let them defrost then blend them in my blender but many types of fruit will do).

       Boil ½ C water. Put other 1/2 C water in bowl and mix in gelatin. Mix until it is thick. Quickly add boiling water and stir briskly. Add honey or syrup. Add juice and puree and stir well. Pour into silicone molds or greased pan and cool 2-3 hours. (I sometimes pour through a strainer to ensure a smooth texture, personal preference here.) Keeps 1-2 weeks in fridge.
